I much prefer old-fashioned oats in this recipe for texture and taste but you can use quick oats if it's all you have. FYI: if using quick oats, the cookies won't flatten into a pretty cookie shape (they'll stay kind of mounded up) like with the old-fashioned oats so you may consider decreasing the amount slightly.

The two substitutions save what may seem like a scant 20 or so calories, but the reduction in added fat and sugar, in one case replacing half of the added fat for a nutrient-dense fruit puree (applesauce) hardly affects the taste and only adds micronutritional benefit.

Half a can of chunk light tuna in water; drained
a whole ripe tomato medium sized chopped
1/4 of a large apple with skin
1/4 cup Lentils, pre-cooked
1/4 cup Quinoia, pre-cooked
1/4 cup canned red kidney beans rinsed and drained
1/4 small Avocado (about 1/4 cup)
1 tbsp of chopped pecans
1 tsp. of chia seeds
1/4 cup English cucumber chopped
1 lemon wedge
I made a mistake by buying dill relish instead of sweet relish, however this made the BEST tuna salad we've had, and no added sugar.
