i make these into 2 smaller rolls....for smaller portion sizes and also i think its easier to roll instead of the big one, i also make for thanksgiving and make extra and freeze them for christmas and they taste so fresh like you just made them, also you may get more than 15 slices i was guesstimating.....but if you make one big one 15 is probablly right, if you make 2 small ones im thinking 20 servings......can probablly get 10 slices out of each one .....made these last weekend and you can easily get 10 pieces out of each roll if you make 2 small ones.

This is a wonderful old fashioned recipe like Grandma used to make. It makes the world's best Pumpkin pie-even people who say they hate Pumpkin pie LOVE this pie!!! I make it with a home made all butter part almond flour pie crust that adds so much to the pie. If you are watching your calories closer, don't eat the crust-this is where the bulk of the calories in this pie comes from-more than half the calories comes from the crust.

I kept playing with a recipe to make it healthier, and here are the results. It's my family's favorite.
This is a staple at Christmas and Thanksgiving in my family. I'm going to be making this soon for Canadian Thanksgiving and might make a few changes to the directions or serving size after making it, as this is mainly from memory :).
This can easily be made the day before and reheated in the oven for about 40 minutes before serving.
It's a lot healthier than many other sweet potato casseroles that I've seen!
