I made this gravy for my Thanksgiving dinner...Having to be Gluten Free I had to improvise. Remember potato starch can be tricky so be sure to continue stirring until ready to serve.
I was at the store and couldn't resist buying some beautiful squash while I was there. DBF loves pies so I made him this special treat. It was very well recieved and I can't wait to make this during Christmas when I go home to see my family. It takes a long time to make, but it is worth it. I hope to upload a photo before it's all gone.

This is basically Libby's recipe from the can but with 1/3 of the recommended amount of sugar. There are probably 100 or more variations of this recipe on the site, but I couldn't find one that used regular condensed milk, real sugar, and whole eggs.
Great to store for the week and have with a cheese omelet, grilled chicken or just munch on them cold as a snack
Adapted from a blog about vegetarian Thanksgiving meals on the New York Times website. I leaned this down by reducing the amount of cheese, adding more squash and moving to soymilk.
