I was unable to calculate the nutritional value of the marinate. I've been told to add "1 weight watcher point" to a serving (1/2 cup). For those of you not doing weight watchers, I'd add 60 calories for the oil and sugar. If anyone knows how to calculate marinate, please let me know!!!

This is a twist on a Cuban Pork and Garbanzo Bean Soup recipe I use. It's came out GREAT and is much healthier. Oh, and the seeds in the jalapeno is what makes it spicy, so just remove the seeds if you don't like it too spicy. All the ingredients are organic, so it naturally has less sodium than if you use traditional ingredients.
Delicious low fat/low calorie soup that's chock full of flavor. Perfect to eat as a first course to help fill-up and get in some veggies. Also great with a baked potato for a light meat-free evening meal.
This is my family's favorite Italian wedding soup. The mini meatballs are a huge hit with the kids. Although many people use spinach for the leafy green in wedding soup, the recipe that was handed down to me called for endive lettuce, so that is what I use. Endive costs a lot less than spinach, and my family and I have always enjoyed our soup made with it. . If spinach is your favorite, feel free to make a substitution.
