This recipes combines all of my sweeties favorites: peas, broccoli, mayo and pasta. I hope you enjoy it too. 1 serving is 1 1/3 cups.
Normally I would also add mint to this recipe, (I have included it in the ingredient list but not the nutritional info) but today when I made it I had no mint. Also, I would normally use fresh parsley not dried. Lastly, I used lime juice over the apple to use 1/2 a lime I had in the fridge.
This is modified from a high calorie recipe that my family loves. This was a lighter version that still passed the taste test.

Very easy to make pea salad. No onions or other ingredients that a picky person wouldn't particularly like. The ingredients can be altered to suit your particular taste!

Once these are cooked, I pop them like they are candy. Look for mini peppers that have a variety of fun colors. They get really sweet when they roast. Use them on salads, in hummus, in the middle of a turkey roll-up, or just eat them plain!
A great cold weather meal or side, works great for holiday parties and pot luck gatherings. I never seem to have any to bring home.
