This recipe was created by my husband, Richard Wakefield, He added some ham to this when he made it. You could also top it with some low fat shredded cheese which will melt when you cover the pan.

I created this recipe after my daughter's wisdom teeth surgery so she could have something soft and savory, with some protein. It turned out delicious, with the consistency of Stouffer's spinach souffle. If chewing is not a concern (;-), I would add sauteed veggies to the recipe.
I love this omelet! Of course you can add whatever kind of veggies you want to it! I usually add onions and mushrooms as well!

I make this to take to eat at work. It's hearty, which keeps me full for a longer time. I use the full egg, on all of the eggs, but you can make this dish much healthier by only using 2 whole egg and the rest egg whites or use egg substitute, depending on your taste and dietary needs (recipe nutritional value calculated using 2 eggs and 4 egg whites). Onions or other vegetables can be added to taste. Fat values are a little less since you drain the potatoes and mushrooms. Beware sodium content in store bought tortillas. This is also great without the tortillas. Better yet, make your own!
Basic Banana bread recipe. Lard has no trans fats, like crisco does. Can use margerine, but the result is not as dense and silky. Sugar can be substituted with splenda granulated for lower carbs and all wheat flour, or wheat pastry flour can be used for more whole grains. Gluten-free flour mixes can be used if needed. Can be made lower carb by using soy flour instead of the white flour.
This is a very dense muffin, not a big riser, but moist on the inside. It's healthy and low in carbs, very low in sugar and high in protein and fiber. This recipe came from Womans Health magazine.
I never had spaghetti squash, so I was dying to try it! This is really good and I am impressed. You must try it!! I am shocked on how good spaghetti squash is. This is also great way to use up your fresh tomatoes from your garden.
