This is a great make ahead breakfast casserole made with shredded potatos, ground sausage, eggs and cheese. Although it contains some "heavy" foods like the sausage and cheese, it packs a real protein punch with 24g per serving (acheived with the Fage Greek Yogurt).

These freeze well and are easy to make. These ake a great brunch item, since they are really a treat. You could substitute some of the sugar for applesauce or other alternative sweetners.
