This is an adaptation of Nigella's banana bread recipe. We didn't have raisins so omitted the bourbon as well.
Cook Goat's Milk, Cocoa Powder, Corn Starch and Salt until thickens. Add Vanilla Extract and Sacchrin.
Fresh summer time fruit salad mix. Serve 2/3 cup with 1/4 cup of vanilla yogurt and you have a great light dessert. I also serve it plain with scrambled eggs for breakfast.
I also add raisins, All Bran Buds or Grape Nuts, and sometimes oatmeal. You'll need to add more milk if you do. You want the mix to be not thin, but not real thick. Add some pumpkin pie spice too! Makes them REALLY good!
This is THE only banana bread/muffin recipe I use. I usually add more bananas because I like it moist, and a little bit more vanilla. It's best made into muffins.

The original recipe is from the Allrecipes website, submitted by Tiffany Rogers. I substituted 3/4 C. of pureed white beans for the shortening called for in the original recipe: this reduces calories & fat, and adds fiber plus extra nutrition from the beans. I also used 50/50 whole wheat and white flour.
