I didn't have cream of tartar, so I omited it, making sure that the egg whites were room temperature as suggested. It worked out really well: the cake is satisfying and light, and moist. I have to freeze half of it so that I don't eat it all at once! Each slice is only 115 calories.

Mix together all dry ingredients in large bowl. Add shredded apples , carrots & dried cranberries. Combine beaten eggs, milk & vanilla. Pour liquid ingredients into dry & mix. Do not over mix. Fill muffin cups 3/4 full. Bake @ 350 for 15-20 minutes. Recipe Yiels 24 muffins

This is my version of the copycat vitatop muffin recipe that I found. Since some of the reviews stated that the muffins were dry, I made a couple of changes. In the original recipe, they used unsweetened applesauce and nonfat half and half. I substituted mashed banana for the applesauce because I thought that would help keep the muffin moist, and greek style yogurt for the half and half. I also added molasses as the splenda website said that would add moisture and boost flavor. Since I watched a chocolate chip instantly sink into the muffin, I let them bake for a few minutes before sprinkling the chips on top of the muffins.
