I modified this from the Joy of cooking. My Hubby (who's from PR) absolutely LOVED this when I made it and has asked me to make it again and again...which is a big deal because he's not a soup person.
a deliciously easy way to enjoy chicken! You can substitute chicken breast for chicken thighs, but that will definitely change the calories and fat.
Great homestyle stew for the whole family and sure to be a hit every time you make it! I serve it over egg noodles but you may omit them if you like, as the dish can stand alone with no problems.
You can add flour to make the cheese sauce thicker (But watch out for the carb value to rise).
Also you can make this recipe with just 1 1/4 cups of 2% milk instead of the half and half cream and water (the cream has less carbs than milk).
I added the green beans for some colour.
Can also be served over rice or pasta if you are not concerned about the carb values.
I used already cooked chicken leftover from the Roast on Sunday.

I don't count spices in the calorie count, because I don't believe that should be counted.
My husband has made this for years! We even had 150 people church spagetti dinner, they loved it!
Using shirataki noodles and a low calorie sauce, you can have a huge bowl of spaghetti that is under 100 calories and loaded with fiber!
NOTE: The nutritional information is calculated for plain shirataki noodles. If you use tofu shirataki noodles, you will be adding more calories.
A versatile casserole - add meat (cubed chicken, cooked ham, or turkey would work best) or use a variety of veggies.
