Adapted from Everyday Food, September 2009. Changed the coconut milk to light, used low sodium soy sauce, and changed the jalapenos to Anaheim Chiles because I have an abundance of them in the back yard! Also lowered the servings from 6 to 4

I tweaked the recipe from Martha Stewart. My husband doesn't like onions, and we both like spicy food. So, I 86'd the onions and tripled the jalepenos.

Make Ahead recipe for freezer. Modified recipe on p. 53 of OAMC by M. Wilson & M. Lagerborg. Use 1/4 of cooled recipe for Mushroom Sauce for Make Ahead casserole. Also use 2 servings of Make Ahead Angel Hair Pasta which has about 1/4 TBS of Canola Oil on it.
Freezes well. Thaw in refrigerator for 24 hours before cooking. Can use any color of Bell Peppers. Optional to sprinkle top with seasoned croutons [not included in my recipe.]. Serve with cooked zucchini. this recipe is high in sodium. Helpful to leave out the bouillon in the mushroom sauce.

I totally made this up! It's loosely based on a traditional, Jewish noodle kugel, but I wanted something that was also savory and had a lot of mushrooms and onions that I wanted to use. My husband said he never tasted anything like it before, but he really liked it, as did I. You could dramatically lower the calories by using fat free ricotta and fat free cream cheese, and you could spray the pan instead of the oil. I think that would probably cut your cals in half, but I had to calculate it for the way I made it.
This recipe is good when you have a lot of things to do and DON'T want to do them.;) So play in the kitchen and don't feel guilty!
We had an abundance of zucchini and squash and i was looking for an easy way to use them up. This is an easy weeknight meal and leftovers are great for lunches the next day. You can also add just about any other fresh vegetable to this for added flavor. Broccoli tastes great in this!
