Throw this together real quick at lunch time and it will be ready for dinner! Serve this with a salad on the side or just add more frozen veggies if you want to reduce the calories/increase the size per serving. This recipe is NOT for anyone watching their sodium as is- but you can make modifications to make it better (plain black beans, and plain frozen veggies would knock the sodium down a lot a ton, if I would have put it in first I would have done that, oops!).
This fabulous recipe was born of a need for something super delicious for dinner, but it had to be vegan. These lettuce wraps do, indeed, have big, big flavor and are so fun to eat!

This has Tuna listed in the ingredients, it does not make the lasagne "fishy", if you want vegetarian leave out the tuna and add another vegetable ie eggplant, butternut etc.
