I adapted this from a meat recipe I read in Chatelaine magazine. It is delicious. I usually use green beans, but we had fresh zuchinni on hand. The original recipe called for asparagus.
Delicious, healthy tomato sauce or you can make it into the best Tomato Basil Soup ever!
Super easy to make, filling! Have a salad to round it out. And top with diced tomatoes and sour cream if desired.
My 2-year old hates broccoli, but will eat this!

I took this recipe from RealAge and modified it. It called for 4 small (2 ounces) blocks baked tofu, cubed. I also added the zucchinni and squash because I needed to use them up. So I guess you could use most any veggie you might have.
I just threw this together one night, and it turned out to be a hit! Even the ground turkey skeptics in my house enjoyed it!
This is so easy and delicious. Guys love it so much I often call it my "real men do eat quiche" quiche. I make my own pie crust, but you can substitute a ready-made one.
This can also be served for brunch as well.
It reheats in a oven pretty well.
I had 2 left over egg yolks that I threw in to use them up.
A non-lip stainless steel pizza pan works best for the grill. Cook time will vary depending on the grill.
