This is a wicked easy, cheap, and quick dinner. We make this when we are short on time, and have energy. Kids LOVE it! (So do the adults)
Seasame crusted seared Ahi tuna over a bed of spinach with a teriyaki soy glaze. I suggest using low sodium teriyaki and soy sauce.
I found this recipe on another site, but it was full of fat and calories. After changing some ingredients, this ended up being a meal that not only my family loved, but that I could enjoy too.
I am a huge fan of ramen. I am -not- a huge fan of the seasoning packets that -come- with the ramen, though. After having had real, Japanese ramen, it's hard to stomach those blah packet-flavors, and they're so, so salty. And thus, this is one ramen broth recipe I'd found (and have heavily modified) to make one of the huge bowls of Japanese-style miso-flavored ramen that I love so well.
NOTE: This does -not- include the calories for the noodles themselves! You can use basic packaged ramen noodles, or soba noodles, rice noodles... basically, anything you prefer to use is good. Or you can leave them out entirely. The choice is up to you!
Gumbo z’herbes, a smothered greens dish, is traditionally served on Good Friday during Lent. It’s a great way to use up vegetable greens such as beet or carrot tops, though feel free to experiment with different combinations—original versions contained seven different cooking greens for good luck. The roux base adds so much depth, you won’t miss the meat. In fact, this gumbo was the most popular among our kitchen staff, beating out shrimp and tasso and chicken and andouille versions.
