Tilapia with a light and crispy Panko crust. Recipe also works for other fish, shrimp, chicken and even beef--be sure to recalculate the Nutritional info if you make changes.
A delicious crawfish etoufee that I occasionally add chicken breast tenderlolins to. This recipe's nutrtional information is for 1 cup of crawfish etoufee only (chicken, rice or cornbread is NOT included).
1/2 lb whole wheat penne pasta
1 Tbsp margarine
1 Tbsp all-purpose flour
1 cup nonfat milk
1/2 tsp pepper
1 oz Parmesan cheese
1 6-oz can water-packed white albacore tuna, drained
1 tsp paprika
Serve over cooked brown rice. Sea scallops can be substituted for the shrimp as well. 5 POINTSŪ per serving.
Adapted from a Martha Stewart recipe that originally used chicken and full fat coconut milk, this altered version makes use of frozen flounder filets. For folks who don't usually like fish, poaching a tender, white fleshed fish in a delicately spiced broth of coconut milk and vegetables seems to make it acceptable; for some of us this preparation is a true delight and makes for an elegant winter supper served with a green salad and a good white wine.
