Taking inspiration from my mom's favourite cookbook and our bible for fall baking - Apples, Peaches and Pears by Elizabeth Baird - I combined the title fruits in a simple whole-wheat pastry crust and baked it to golden perfection. It's the perfect treat for the end of Summer when peaches are in their prime, pears are just starting to emerge and even early apple crops are half decent. Without having to fiddle with a pie pan or a top crust, it's a snap to put together!
add all ingredients except bacon and parsley to the slow cooker and cook on low for 6 hours. Just before serving add the parsley to the slow cooker and stir to combine. Brown bacon and crumble on top of the dish. Serve with slices of french bread in the dish to soak up the liquid.
An alteration on the original, full of protien and fiber, but not so full on calories and fat!
Great Easy French cuisine found at Fine Cooking. I don't like to use alcohol much when I cook so I try and substitute as much as possible. When I made it, I omitted the cognac and used peach necter, for the wine you can substitute it with beef broth.

This is a great meal when you need to use up vegetables but need to disguise them. Quiche is a complete protein meal even without animal meat. I add meat only sometimes.

It is mainly vegetarian , omit the bacon to be truly veg.
However, my husband asked for More bacon next time~ so that's what I'll do~! ;-)

This is a vegetarian rendition of the classic French dish called Coq Au Vin, traditionally made with stewed chicken and red wine. The cumin adds depth and a slight smoky flavor to the tofu so be sure to use it. Serve it with a mixed green salad and potatoes.
