Adapted from Fancis Lam's (salon.com) Weapons-grade Ratatouille recipe. This is extra lovely when delicious local tomatoes are in season (heirlooms are great when affordable), but for a delicious and healthy dish year-round, substitute two boxes of Pomi crushed tomatoes (Pomi is an Italian brand that uses ripe, Roma tomatoes and no salt). Patience serves you well here. Cooking time is slow, but you'll be rewarded with amazing flavors! Fresh thyme and basil are added to your liking. I use several ounces of basil, and a generous tablespoon of thyme, both chopped.
Use a tsp at a time (sparingly - very rich).
Try a mix of olive & safflower oils if olive oil flavour is too overpowering for you.
Store in fridge in glass jar for a week. Put greaseproof paper or plastic wrap over top of mayonnaise to stop skin developing.
Lovely picnic party piece or luncheon.
Slice on arrival.
Seve with cherry tomatoes and salad.

These are my quick and easy Veggie Cheese Quiches. I received a My Lil' Pie maker and realized that pies are not Spark People friendly for the most part. Modifying greatly a recipe in the book that came with it (different ingredients, quantities, and no milk), I was able to concoct this recipe that fits into my life and diet just fine! Broccoli instead of mushrooms make some friends and my daughter happy, and this way you can make them different but at the same time, just saute' separately!
