This is another of my all time favourites.My mother is a Konkani and these dishes are a part of my childhood memories.This dish is made from the same wild Mangoes which are available and very popular all over India and then were plenty.Today these can hardly be seen in Mumbai except from the last week of May till mid June.There are two variations of this Recipe and I'm giving both.

A simple dal(Indian lentil stew).

1 15 oz can of chickpeas (kable chana, Garbanzo beans)
3 tablespoons oil
Pinch of asafetida (Hing)
1 teaspoon cumin seeds
1 tablespoon gram flour (Besan)
1 large tomato
1 teaspoon ginger paste
1 teaspoon chopped green chilies
2 teaspoons coriander powder
1/2 teaspoon turmeric
1/2 teaspoon red chily powder
1 teaspoon salt
1/4 teaspoon garam masala
1 teaspoon chopped cilantro (Green coriander)
Thinly sliced tomatoes for garnish

In India Shrimps are called "Prawns"----and the best among these are the Grey striped Tiger Prawns.Thes are the tastiest huge Prawns that I buy----expensive but taste wonderful when first marinated in hot,pungent Spices and then blanketed in layers of Fragrant Rice and steamed----a veritable Feast for all the five senses!!!The aroma would entice even the most picky eater to take more than a single helping!!!

CHICKEN SATAY

Marinade:
½ cup coconut milk
3 tsp of red curry paste (add more to taste)
1 ½ tbsp of brown sugar
Dash of chili powder if desired
½ lime squeezed

Mix together and place cut 1 ½ in wide strips of boneless chicken breasts in the mixture. Marinate at least 30mins. (approx. 4 chicken breasts- or however many you would like)

Soak skewers in water for at least ½ hour.

Place marinated chicken on skewers and broil or grill until fully cooked.

Peanut Sauce:
1 cup coconut milk
1 cup chunky peanut butter
2-3 tbsp brown sugar (to taste)
2-3 tsp of curry paste (add more to taste)
Squeeze lime juice to taste.

The ingredients aren’t set in stone, so mix together and add more or less based on taste.
