My mother in law is from from Zambia, and her father is from India, so she was raised with very ethnic cooking, as was my husband; she gave me this recipe shortly after we were married. It is fabulous! Serve with roti or chapati bread.
Use in smoothies or with hot non-dairy milk as tumeric tea. Great as anti-inflammatory
Please note: this recipe is Vegetarian, NOT Vegan. Also, while it has curry and so I'm calling it an Indian dish, I don't know of any traditional Indian dishes that are like this.
That said, this is one of my fall favorites - creamy, filling, and so full of flavor!! It takes a fair bit of work to get going, so I make a big batch in fall when the necessary veggies are cheap and freeze most of it in serving-sized containers for work lunches throughout the winter. It is a BIG batch - mostly fills my largest soup pot - so be warned, and feel free to edit for a smaller batch as needed.
Great use for leftover grilled chicken. The flavors blend well to make a really tasty salad to stuff in pitas or top mixed greens.
This is a quick dish that I make often and then freeze he left overs for a cold day. It's the herbs and spices that you add to make it delicious)
