This is light and G.I. Diet friendly. It makes about 2 cups, so I put 8 servings. The olive oil is included in the overall nutritional information, but I don't know if it would be that high because it is only used to coat the eggplant before roasting, but its skin gets peeled off afterwards.
I combined a couple recipes to design my own with what I had in my cupbords. Tastes pretty good...to me.
I made this last week and it was easy, good, filling, and fairly inexpensive. It’s from a flyer from Whole Foods, which estimated the cost at $2.48 / serving. It lasts for days; it’s the kind of thing you can make in a half-hour (and then put in the crock pot) and you have gloppy tasty food for days. The most difficult thing is just bothering to get the ingredients. I have it on pasta (I used bow noodles, but any noodles would do); you could also have it on rice. Or glop it onto a piece of toast. And you could add frozen peas to the recipe, or probably most any other veggie. And maybe diced potatoes. It says to serve it with warm naan or another bread. I skipped that part.
This soup tastes like India in a bowl! Serve with crusty bread and a salad for the perfect autumn dinner.
This delicious Indian masala is made with tofu rather than paneer, but no one will ever know!
2 tablespoon coconut oil
1 small onion, finely chopped
1 clove garlic, minced or grated
1 teaspoon fresh ginger, grated
3 cups butternut squash (about 1 small squash), cubed
4 cups fresh or frozen broccoli florets
1 (14 ounce) can coconut milk (lite or regular, but I used regular)
4 cups chicken or vegetable broth (plus 2 cups water to thin)
1 tablespoon curry powder
1 to 2 tablespoon thai red curry paste, use 1 tablespoon for less heat
1/2 teaspoon cayenne pepper, or to taste
1/4 teaspoon pepper
1/4 teaspoon salt
2 cups shredded sharp cheddar cheese, plus more for topping
2 ounces crumbled goat cheese, plus more for topping
fresh cilantro, chopped, for garnish
Healthy, hearty, and spicy lentil dish. Not the most beautiful thing ever, but it's inexpensive to make and good for you too!
This is a very filling and delicious dish. Recommend serving it with rice(basmati or jasmine). The serving sizes are enormous!
