Cutting back on carbs because of the Blood Sugar spikes they cause. This is a great LOW CARB dressing for all those healthy salads which will be replacing my pasta and rice on my new diabetes diet.
Delicious pasta and bean soup. I use homemade noodles in my recipe and have them calculated into the totals.
Somewhat make-ahead. Family will love this, and it's a good intro to meatless meals where no one will miss the meat!
Hearty, chunky, delicious minestrone soup with loads of protein, fiber, and veggies. Perfect for a cold night in the winter.

This is a wonderfully hearty lasagna that's a little high in sat fats but great as a once in a while treat. My family loves this and I usually make extra to freeze and for him to take to work. I used 11 lasagna noodles (couldn't figure out the proper conversion numbers) {1 noodle = 1 serving} Prep time can be reduced if you buy pre shredded cheese. I shred mine as the pre shredded cheese cost almost twice as much.
We make enough of this to make meals in advance to grab and go for work! they are much healthier then Lean Cuisines or SmartOnes.. which have a lot more sodium then you'd think! eep!
