You can substitute any vegetables you like in this dish. Fresh spinach, Peppers, olives, green onions, chives, garlic, all make fine additions. Frozen may make the mix too watery. Cheese may be substituted as well depending on taste. I think Swiss may work well. I think the Parmesan is a great browning cheese however and would use that whenever possible.
