This is Wonderful. JM recommends you slice the veggies with a veggie slicer creating a ribbon type effect. Very pretty when plated. However, I am a women who is never done, so I used the Veggie Slicer and sliced them into Ridged Ovals. Not as pretty, but a whole lot faster. Also, there is a lot of room to play here. If you have a market like Sprouts, they make over 15 varieties of chicken sausage daily. I used a Hot Parmesan Chicken Sausage and a Basil Chicken Sausage. Just go with the flavors you like. I also used Canned Tomato’s vs. Fresh because it was faster and the Seasoning is included. If you decide to omit, keep in mind you will need addtional seasoning or this will be bland.
A healthy spin on a classic comfort food. I do not add any fillers like bread crumbs or cheeses. If you would like to add a flavor enhancment, add fresh grated parmesan cheese. The seasonings of the Chicken sausage make this perfect everytime. Growing up, my mom would let me have a whole bell pepper! Now that I am older and understand the need for portion control, I accomplish this by slicing the bell peppers directly in halves.
