I had a pound of stew beef, but didn't want traditional beef stew. So, I made a take on italian white bean stew and added quinoa for added protein.
I had received a number of tomatoes and summer squashes in my CSA share. Here is a recipe that helps use them up. You may substitute beef, pork, veal or sausage for the bison.

Adapted from Better Homes & Garden: I was looking for a recipe to use a batch of fresh full-size spinach that I received in a CSA package. But we decided to add leftover chicken (also from the CSA package).
This is a cheese lover's dream, but beware! High in calories!! I could probably go with less cheese next time to reduce the calories. But was absolutely delicious like it came straight from Olive Garden or something!!
