I have been looking for something different and pretty easy, but also tasty. I've came across this Eggplant Rollatini recipe, the only thing the original had soooo much sodium in it.... it was unbelieveable. So I tried to twirk it a little bit and it came out pretty good. A for me! YAYYYYY!!!!!

Absolutely fantastic. You could easily swap the turkey sausage with garbanzo beans to make it vegetarian. I don't include any added salt, but you could salt to taste if you prefer. I also serve it with Parmesan cheese and red pepper flakes. Yummy!

This is my Mother-in-law's recipe. We traditionally serve it with a piece of bread floated on top of the soup, a generous sprinkling of cheese over the bread, broiled until bubbly and golden. Since cutting out animal products, I skip the cheese and save quite a few calories.
This is a little lighter version of chicken parm...and pretty easy, too! This was made with string cheese the first time because that's all I had...and it was so good, that's just what we use.
