I found a similar recipe on the Cooking Light website. Since I prefer to use olive oil instead of cooking spray, I made some adjustments.
Everytime I make this dish, people just rave over it! It's delicious and easy to make!
Goes great over rice or with a side salad or vegetable!
What I'd change: The texture was grainy (fine) but a bit dry (not fine, too crumbly). I would add 1c plain yogurt to coat the ingredients and, hopefully, help them stick more smoothly.
My tastes require more sweetener. 3 more packets of sweet-n-low.
The jalepenos were really, really good! I wouldn't change that, but want to note that I should always have them.
The zucchini was also a fantastic addition. Great texture add. Very soft and moist after baking. I would add perhaps a couple cups of shredded zucchini.
Also needs spice. Ginger for metabolism, inflammation and digestion. Cinnamon, for blood sugar regulation. Red chili - same reasons as ginger, roughly. Tbs unsweetened cocoa powder, flavonoids!
I need some carbs. Pumpkin would work great. I'd like to try a batch with pumpkin and another with bean mash.
