Orginally I think a WW recipe, made here with lentils for extra fiber. Good as a kind of chili, on baked chips, in a tortilla, on a taco salad....
Spicy chicken and mangoes are mixed with a tangy dressing and served over romaine lettuce.
The texture is a bit more crumbly than regular pound cake, but I love the taste.
My regular Chili recipe with the Carrots and rice removed to make it South Beach Phase 1 friendly.
A low carb, but fairly high fat, version of my lower calorie Salmon Cauliflower Bake,
Can be made ahead and reheated.
The carbs could be reduced even further by replacing the milk with 1 1/2 cup milk and 1 1/2 cup chicken stock.
This is an awesome low carb side dish, with healthy fats. You can always substitute the Blue Cheese for Feta Cheese if you prefer one over the other. For an extra treat thrown in some Cranberries...Yummmm
