So, so, good --and very filling. Make it once and you can have breakfast, lunch and dinner for several days.
I recently had Weight-loss surgery and needed to start eating better and smaller! Not needed but if you are like me and at a point of needing fulfilling meals what aren't chucky in nature, use a food processor to mince your cooked turkey. You will need a 8x8 baking dish Over pre-heated at 375
Stuffed pork tenderloin with low fat mozzarella cheese, spinach, sun dried tomatoes and basil. Sounds like little Italy to me and particularly it reminded me of a Caprese salad. But instead of using buffalo mozzarella we are going low fat.

Cauliflower "Mashed Potatoes" (used recipe submitted by Terryn3), substituting plain Greek yogurt for sour cream
Precook chicken breast or used canned. Add 2 oz chicken to center of each tortilla. Top with about 1/3 of 1/4 cup of cheese. Roll up and place in baking dish. Pour 1 can enchilada sauce over enchiladas. Bake at 350 for 15 minutes or until hot. May sprinkle with extra cheese.
It might look like a lot of instructions, but honestly, it takes less than 20 minutes to make and I thought it was yummy!
I could eat this every single day if only there were an unlimited supply of tuna... yum yum yum !
This dish has been simplified for minimum preparation and can be fine-tuned to your palate.
A lovely little cheesecake type desert (or breakfast!) Low in carbs and calorie friendly, too when you just need a little something sweet. Also freezes well so you can take out one or two at a time, but store the rest.

This is a quick and easy "good stuff" (as my hubby would call it) low calorie, filling meal that I make for lunch or late dinners.
I enjoy food and it has to have flavor, this dish definitely has it! I serve it with a chunky fruit salsa salad.

The carb count is probably high as the wine is reduced by half in the cooking process to compensate for my use I have indicated 8 servings, while I expect to get 4 from 4 short ribs.
