I knew I wanted a salad, but I didn't have a lot of fresh produce. So I came up with this out of my freezer, fridge, and pantry! I didn't even use salad dressing on it!
This can be modified SO many ways. Enjoy!
This was inspired by a very old Weight Watcher recipe. It reheats well: you can cook once for two meals.
Super easy combination of chicken, corn, black beans and salsa that can be whipped up in a flash for lunch. Can be used in tortillas, add to lettuce for a quick taco salad or just eat with tortilla chips. High on protein and low on fat!!
Great as a filling lunch or light supper. I use deli thins instead of pitas and I use Tastefully Simple taste of india rather than all the other spices. easier for me.
Delious turkey, cheese, and lettuce roll-ups. You can subsitute a sandwhich for a roll-up; less fat!

It's mainly from Emeril's "There's a Chef in my Soup!" except I modified the recipe to suit what I think will be my liking. We'll see.

I actually used Veggie Shreds for mine and the flavor was almost as good as Taco Bell.
This is a yummy way to use up left-over turkey or chicken. It only takes 2 oz. for a filling meal.
