Delicious twist on Chili and it couldn't be easier to make. In a pot add 1 can of white kidney beans, 1 cup of salsa, 1 1/2 cups of vegtable stock or chicken stock, 2 cups of cheese (optional) it really thinkens it up but i stopped doing it to cut back on calories, 1 tbsp cummin, and 1 cup shredded up pre-cooked chicken (optional), just before serving add a handfull of crunched up whole wheat tortilla chips a sprinkle of cheese and a tsp of sour cream on top.

You can use brown rice to increase the nutritional value, but it is delicious with whie rice. Also, use a bag of mixed frozen vegetables and cooked rice to shorten the time for this recipe.
