This fresh salsa tastes the best during the summer time when the Plum or Roma tomatoes are ripe and juicy, but not mushy. I adjust the amount of cilantro and jalapeno I use according to the friends attending the gathering. The spicier the better. Fresh cilantro is a must. You can add salt and pepper if you like but I have found that with all of the fresh flavors of the ingredients, it is not necessary.
This is a baked version of the classic chicken chimichanga. My family loves this! I usually top them with a little salsa for a fat free treat, but my husband likes to use sour cream.
