This is a quick and easy meal. Serve the chicken meat with tortillas to make chicken tacos.
This is not a two person recipe, but we like the recipe a lot and the left overs are easy lunches. Chopping the toppings takes most of the time.
I made this to have something to eat with my beans. It fit the bill perfectly.

This a great mexican dish! I wanted something to make ahead and that could just be popped in the oven. I made it over the weekend and we ate it later in the week.
Low Fat - I take an entire bag of beans, soak them overnight, rinse them well and drain, then portion out into 2 cup containers, fill enough water to cover and freeze for easy prep later on.
This could totally be done with turkey bacon to lower the fat but my husband cooked it (his FAVORITE beans ever and was trying to recreate) so I was trying to get close to accurate read for what I was about to eat. And yes, I know the sodium is high again, the husband was cooking. He claims to have actually used closer to .5 lb bacon so the nutrition info uses that.
