Fix it and forget it!
Vegetarian Chili w/ the taste and texture of the original! Non-Vegetarians wouldn't know the difference! Make it as spicy or mild as you like. I would say this is medium spiciness, but I know that is left to interpretation!
These are really fun and really tasty tacos. Plus their low sodium. You can add other ingredients to them but obviously the nutritional info will be different.
Beans, ground beef, chili powder, jalapenos, etc. Tastes great with corn bread - and at 246 calories per cup, you might have calories left for a piece of corn bread! I usually eat mine with 1/6 of a prepared box of Jiffy corn bread. Also makes a great frozen lunch.
Made this on a whim to see if it compared to the subpar boxed grocery store brands and it was surprisingly good!

2 onion
1 packet of taco seasoning
3/4 cup water
A very refreshing salad, full of fresh fruits that goes perfect with a grilled fish dish.
The nutrition info includes the basic ingredients but you can add almost anything to taste -- cumin, chili powder, chopped red or green bell pepper or hotter peppers to taste. It'll shift the calories a bit, but it's a good start. Fiber, protein and lots of flavor!

put a serving on top of 100 calorie package of crumbled pretzels and top with fat free or 2% cheese. My version of frito pie. I also top with 1/2 Haas avocado.
This was actually a modification to a recipe I got in a WW meeting. It;s a 1 point per cup soup that is very comforting during the fall. It tastes like a lot of the soups you get in mexican chains, yet you control the ingredients.
