My family loves pasta salad for picnics. Since I haven't been eating pasta as part of my diet, I would just make it and do without. Well, for Labor Day, I realized I didn't have pasta and decided to use some quinoa I had in the pantry. This is tasty, nutty and HEALTHY!! Your family will most likely NOT miss their pasta. Add green and red pepper, chopped onion, small diced broccolli and cauliflower, cucumber and any garden fresh veggie to make even better!
I hope that you like this, because it was really yummy to my roommate and I. It looks like it has a lot of ingredients, but it is really easy to make. Feel free to sub shrimp for other seafood or poultry.

P.P.S. Please don't hesitate to season the shrimp VERY good, this dish will get most of it's flavor from the broth left from shrimp.

I used carrots because I had too many in my fridge, but note that they are also an excellent source of vitamin A and fiber. The walnuts I used are loaded with omega-3 fatty acids, and those raisins are full of mineral rich anti-oxidants.

This is a family favorite with it's light lemon flavor. There are many recipes posted for Chicken Picatta, but I found very few provide accurate nutritional information. I have take special care to record all the ingredients for a proper calculation. The nutritional calculation only use 1/4 cup of flour, even though you need a 1/2 cup to dredge the chicken. Most of the flour will not be used.
