I came up with this recipe to be a quick, nutritional, high fiber, low calorie breakfast. You can use granulated sugar in place of splenda. You can use alternative dried fruit and nuts to add variety. I have made 10 different varieties of them adding things like pumpkin, apples, and using butterscotch chips.
I modified the original recipe to my taste. For instance, I swapped out Mozzarella for old cheddar cheese. I also prefer ground turkey to ground beef, and sausage to pepperoni. You can play with this and make it your own.
This recipe is always a hit, and very easy to make.
This recipe comes from my Well Done (TX) Cookbook. It is so easy and tastes great! I use only 1 tbsp. sugar, but the real recipe calls for 2 Tbsp., so I reflected the change in this recipe calculation.
Medium sized meatballs (1.3oz pre-cooked weight meat each). Nutrition information assumes 1/2 lean elk, 1/4 lean venison and 1/4 ground pork. My venison was already mixed with pork and seasoned so you may want to spice up the mix to your taste.
