This is a tasty egg salad recipe with very little mayo. You could add more but it would change the calories and everything.
A picnic favorite, this salad contains broccoli, water chestnuts, cranberries and just a little bacon for delicious results. This version has plenty of creaminess without all the fat. Make it once and it will become a regular on your backyard barbecue menu.
For those of you who like fried crab rangoon from Chinese restaurants, this is a baked and healthier alternative to the fried crab rangoon with fat-free cream cheese.
This comes from a Basque restaurant in my home town. Its absolutely delicious and really filling. You can add in beans, hot sauce, or dip a sandwhich into this broth. It actually gives cabbage soup a good name! Plus it freezes great so don't worry about the large quantity.
Chicken broth can be swapped with vegetable broth for a vegetarian option. Mix and match beans for variety, or use kale or swiss chard in place of collards.
