You can play with this recipe and add whatever fresh ingredients or salad dressing that you like. The surprise is that the flavors blend well an it's very filling!
This is a variation of a dish I had at a lovely little Italian restaraunt. The broth adds the background flavor, but each component of the dish stands out as its own unique flavor, with no flavor being stronger than the rest.
Note: I cooked my beans in the crockpot with a hambone. I then used some of that broth and some of the water I boiled my sausage in. I have no idea how many calories this adds as I could not find the nutritional information. This will feed 4 hefty servings, or 8 as a light dinner. Also, I used ditalini pasta which are small tubes, but any small pasta should work fine. It may seem like a lot of work, but if you cook the beans in the crockpot and forget about them, there is really only 20 minutes of prep and cook time.
Delicous comfort food! Don't let the prep time scare you, I included the time needed to soak the beans which can always be done overnight.
I let it cook overnight or get it started before going to work in the morning. When I get home the beans are done and I have to finish it up.

The raw ingredients and amounts are guestimates only. This soup is actually made with whatever veggies you have in the refrigerator, and in any amount you want to use. The basic "stock" stays the same.
This is a chicken and dumpling soup my Mom called giggle soup when we were kids. It's a family favorite.
