2 cups chopped tomatoes
1 cup diced purple onion
1/2 cup shredded carrots
1 cup cashews
2 cups water
1/2 package firm tofu
1/2 package firm tofu
1/4 cup lemon juice
1/4 cup olive oil
1 tsp garlic salt (to taste)
1 tbsp turbinado sugar (to taste)
