On a chilly autumn day, I wanted some comfort food, and the first thing that came to mind was Chicken Pot Pie. However, since I have wheat and dairy allergies and want to maintain my weight, I knew that wasn't a healthy idea for me. So, I made this deliciously creamy, healthy, and tasty soup. Feel free to adjust it as you desire!
This is a Rachel Ray Recipe with a couple of changes to lower fat content and increase protein. It's fabulous.
Using lowfat buttermilk and dry ranch dressing mix for big servings of tasty dressing - a serving would be 1/4 cup! I like a lot of dressing and don't care for vinegar all that much.
This soup is sooooooo good you won't believe the calorie counts!! I got this recipe from a co-worker, but changed the ingredients a bit (originally called for 2 cups of heavy cream-yikes!) I don't think that you will miss any of it in this version. My kids even ate it!

Add the warming spice mixture of curry to the pot, and your bowl of soup will taste as if it has extra powers to combat the chilly winds. Since Winter squash is one of my must haves for the month, I made a pot of butternut squash soup with curry and coconut milk. The effect is doubly warming but also somewhat sweet. Don't worry, I used light coconut milk that contains 68 percent less fat than regular coconut milk, significantly cutting the calories of this tasty soup. To cut fat further, substitute one can of coconut milk with chicken or vegetable broth, as is done here. Serves 6.
This is a good way to add some fruit serving to cole slaw. Very nice way to change up cole slaw.
