This is a light and healthy soup that is perfect on cold days! What I really like about this recipe is the ability to add just about anything to it! I actually add kidney beans to mine sometimes to make it heartier.
Red lentils look very pretty, until they are cooked! This soup isn't necessarily beautiful to look at, but it is extremely tasty and filled with vitamins, protein, and fiber. I adapted it from a recipe I found in a vegan cookbook, and gave it a little more flavor with kale, seasonings, and smoked paprika. I LOVE smoked paprika, and I strive to put it in almost everything!
With this soup, you can easily get lunch or dinner on the table in under an hour. Serve with lemon wedges, toasted whole-grain pita bread, and a side salad for a filling meal. If you'd like the soup to be even creamier, stir in some plain, unsweetened soy yogurt (for vegans) orG Greek Yogurt (for vegetarians) before serving.
Feta Cheese, Garlic, and Ripe olives, along with a hint of hot sauce, give a Greek salad-like flavor to this distinctive dip. Besides pita chips, its terrific with crackers, tortilla chips, pita bread or carrot and celery sticks.
Enjoy this for lunch with a smear of Mint Pesto and a cup of Gazpacho. Or serve it as an appetizer for your Cinco de Mayo menu. Follow it up with a Mole Burger and Mexican Grilled Corn. Talk about tickling your tostada!
This is a gluten-free version of the great Spinach Balls made by my friend Ruth. She uses 1/2 cup breadcrumbs for the potato flakes. Or use 1/2 c. gluten-free breadcrumbs.
Eileen and Cody were out Christmas shopping when they stopped for a snack and had a lovely bean salad. The next weekend they craved said bean salad. They went to the cupboard to see what was there and this is what they came up with.
This is high in protein and low in fat. It's nice hearty main course salad or use smaller portions for a side or a snack.

This is a simple basic hummus with the addition of sun-dried tomatoes. My kids like it too.
I actually got this receipe years ago from Slim Fast online. Every time I've made it everyone has loved it! (FYI, the picture I found online, it was as close to what it catually looks like without the cheese and sour cream as I could find.)
This Recipe is on the back of Trader Joe's Brand dried beans. But really could be used with any mixed beans.
