This dish is full of great flavours and so easy. It looks - and tastes - really summery, and I love it as a light al fresco lunch or dinner.
A really delicious, filling, high protein lunch, much better than ordinary baked beans!
(You could cut the calories even lower of course by using low-fat cheese.)

For a cheesier taste you can sprinkle some nutritional yeast over them.

I just tried this recipe for dinner tonight. Trying to use just 1 tbsp of olive oil and some spices for the flavor, lots of vegetables and fish.

Easy poached salmon is sophisticated with a creamy caper-and-lemon sauce. Make it a meal: Serve with snow peas or roasted asparagus and a whole grain like quinoa or brown rice.
Something I whipped up during a late night hunger session from what I had on-hand in the fridge and cupboards. Delicious and healthy!
Instructions
Chop the apple and celery. Add to a bowl
Drain tuna and add it to the bowl.
Add 1/4 cup of greek yogurt and 1 tbsp of mayo to the bowl.
Add spices, salt & pepper, and lemon juice.
Mince onions and red bell peppers and place in medium bowl. Drain salmon. Remove skin and bones. Add to bowl with other ingredients. Mash into four patties. Spray pan with Pam cooking spray and saute patties until browned on both sides.
