This is something I learned to make to stretch the salmon with my family. I just had to learn to make it healthier. Of course I could have used brown rice or added vegetables but I like my veggies on the side.
I am not a cook. I am sure that you could make many alterations of this recipe, including using chicken or steak in place of the shrimp. I wanted something rich and creamy so I could get more veggies into my meal. You can also cook it without the olive oil and use fat free cream cheese and non-fat evaporated milk. Yukon Gold is my potato of choice.
