This is a version of one of my favorite recipes from the show Cook Yourself Thin. I absolutely love it. Add whole grain spaghetti cooked with soy sauce and you have a great "low mein".
With just a few ingredients, this is simple to make. Yet its versatile enough to adapt. As made, its low sodium and low fat, and high in protein and vitamins. I bought all of the ingredients at Trader Joe's, but I am sure you can find them at the regular grocery store.
I modified this from a recipe I found on line - and made it healthier for those counting calories. I hope you enjoy!
