I was craving chocolate and these were super fast to make and tasted delicious. I used 2/3 c sugar when I made these and it wasn't quite sweet enough. If you want to cut down on sugar, I recommend no more than 1/4 c. I also recommend using pure vanilla extract as opposed to imitation. The nutritional info doesn't include the nuts. Please note that size of brownies is approximate. The pan I used wasn't quite 8-inches, but the nutritional info is calculated for 9 brownies.
You'll find a batch of this hanging out in my fridge at least twice a couple times a month! I add grilled chicken breast to make it a complete meal.

Since our garden is overflowing with the awesomeness of both heirloom tomatoes and cucumbers, I've been indulging in lunches like this: a simple yogurt, garlic and dill dressing enrobes canned tuna and the veggies on a big bed of lettuce. Throw in a pita and call it yummy!

Adapted from a Mark Bittman recipe in the NY times, I added bean sprouts and cut the oil significantly due to personal taste. I may try Miracle Whip later on with this combo instead of the oil / vinegar.
