This is one of our family favorites! Although it's pretty low in calories and fat (for fettuccine alfredo), it has plenty of flavor. This looks really good, too, so we make it sometimes when company comes. Hope you enjoy it as much as we do!
This is the easiest recipe I know, and it's quite tasty, too. Grill or saute chicken, cook rice and top with salsa!
Great change from the normal chicken...even goes great on a salad the next day!
This light recipe is great for lunch, supper, or both. It serves eight, so cook once and eat twice!
This hearty entrée uses half ground turkey and half lean ground beef and no added salt for a lower fat and salt tasty treat.
We ditched the mayo from this sandwich staple and boosted the nutrition with crunchy vegetables.
I created this dish for dinner one day when I was pressed for time with ingredients I had on hand and it was an instant hit! A low-carb delight as is, but you can serve over wide, whole-wheat noodles or brown rice if you are not watching carbs.
A combination of two favorite Italian classics - a definite family favorite that's easy to make.
This slow-cooked chicken is easy, delicious and versatile. Leftovers are great for a fetticcini alfredo or salad the next day.
This is a makeover of Cracker Barrel's Chicken & Dumplings. My aunt had created the original recipe which called for 1.75 lb chicken and whole milk. It was always one of my families favorite dinners that I made once in a while on special Sundays. Recently, I decided to try a healthier version of it with lower calories, cholesterol & sodium to see if it would pass the "family test". It did! They couldn't tell the difference. The healthy version of this recipe went down 76 calories, 31mg cholosterol & 1104 mg of sodium per serving.
On a side note, I know some people who use prepackaged biscuit dough to make their dumplings to make it easier but I don't like the taste of the perservatives because it makes the whole recipe taste like it came out of can. There is nothing like homemade!
This six-ingredient dinner is the best for weeknight dinners!
Instead of reaching for fried chicken or frozen chicken nuggets, turn to these spicy, crunchy ones instead.
This is a recipe that I have been experimenting with and tweaking for years. Always a family favorite and they didn't even notice the difference when I re-invented it using low fat ingredients and turkey instead of beef.
The best thing about this meal is how much fun you can have making it. Since it is more of a "stew" I have added all kinds of different vegetables and sometimes even put left over pot roast in with it. Have fun and be creative!
Halloween - Autumn Variation: Make this recipe just as described below but remove the potatoes and add one can (15oz) of pumpkin puree or 2 cups fresh pumpkin peeled and cubed, 1 tablespoon pumpkin pie spice and 3 Tbls. of brown sugar!
This spring time stew is a must have at any Derby party! Traditionally made with pork, beef, chicken, and rabbit, I've added more veggies and lightened the meat. The best part: This is a slow cooker recipe, so the burgoo will be ready when the horses are loading into the gate.
