This large Summer Salad is a meal in itself for lunch or dinner. I like to vary the type of lettuce, spinach or other garden greens as well as the fresh vegies available out of my garden or from the Farmer's Market (summer squash, snap or snow peas, broccoli, etc.). Also adding a tablespoon of sunflower seeds or slivered almonds is a great protein addition, or a serving of salmon or tuna on top for a non-vegetarian version of this garden salad.

This sounds gross, but after I tried it, it is delicious! It is very rich in flavor so 1 cup goes a long way!
This is an awesome dish that is always requested at parties! I tripled the original recipe and made a few tweeks for a larger serving.
