This salad is asian inspired. It combines the freshness of salad and the rich, peanutty flavor of satay. The dressing can be altered to suit your taste. Sometimes I will add some marinated firm tofu to the top to mimic chicken satay.
while pasta is cooking, grill vegetables, let all cool down while grilling chicken. Serve pasta salad with slices of grilled chicken on top
