I love mexican food so I came up with this healthy salad to fight my cravings
A low calorie salad dressing made using general tao stir-fry sauce!
This is my basic salad dressing recipe, taught to me by a good friend from France. You can change out the oil or vinegar type, add light mayo to make a creamier dressing, use sugar or Splenda instead of honey, add garlic or shallot to give it more of a bite, switch vinegar out for lemon or lime juice, etc. Basic and versatile.
For a protein kick, top with sliced chicken breast from Joy's Spicy Grilled Chicken breast recipe.
Change Mayo for Greek yogurt; Add onion, apple, celery, craisins and lemon juice; Grapes can also be added if prefered
I made this on a whim because I was tasting a crunchy, colorful salad... feel free to add more of what you love and less of what you hate. I used frozen edamame which I cooked according to the package and shelled. I also used bagged shredded cabbage to cut down on prep time.
I made this the other day for a big family function, and there wasn't a drop left in the bowl after dinner. :) Big success...

If you are making to bring to a potluck, slice the onions ahead, but plan on cutting and assembling on site, right before serving. Do not refrigerate the tomatoes or you will destroy their flavor and make their texture mealy.
I wanted a low calorie and low fat Potato Salad for the Fourth of July this year, so I created this potato salad. I substitute the yogurt for the heavy Mayonnaise that also every potato salad calls for. To my surprise and my husbands we enjoyed this little creation. So I thought I would share it with you all.
