Oh so good. Nothing light about it, but what a treat.

I absolutely love rhubarb and came across this recipe and converted it to lower fat. It helps to have it growing in my back yard so I do freeze alot for winter.
It's even kid approved.

This turned out so crispy on the outside and so moist and soft on the inside.

*I didn't have buttermilk on hand so I used 1Tbls lemon juice in 1Cup of milk, let it set for 5 minutes or so and that is the substitute for Buttermilk (you can use 1Tbls vinegar instead of lemon juice if you like)

The Powdered Sugar is just to coat the Cake after it's cooled.

Not a health food by any means, but we can at least cut a little of the carbs, cals, and sugar.

It's a wee bit finickier that your average bundt cake by gosh-oh-gee, is it worth it.

My Mom's dump and mix cake recipe, made healthy!

Great homemade flavor, super moist and keeps well. I think the calories are low because there is no oil in this.

A classic zebra cake

REALLY GOOD and Easy

I substituted the butter for ground chocolate chips, I cut the fat 1/3 and added lots of flavor

Yummy and moist, they don't need to know how healthy it is!

Cake Batter:
1.5 cups chopped pecans
3 cups all purpose flour
2 cups sugar
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
3 large eggs, lightly beaten
4 large bananas, mashed
8 oz. crushed pineapple/don't drain
3/4 cup canola oil
1 1/2 tsp vanilla extract
Glaze:
4 oz cream cheese softened
2 cups sifted powdered sugar
1 tsp vanilla extract
2 tbsp milk
