This delicious and easy to make salad is from the book "By Any Greens Necessary" pg 143.
Not exactly sure on how many servings but it makes a lot and is really good! Could be used as a main or side dish
I sauteed the zucchini and mushrooms in a little butter, just enough to soften, then chopped, diced, and added the rest together. Wonderful Salad!! I also mixed the last 2 ingredients together to make the "avocodo ranch" salad dressing, and then added it per salad. The amounts are guesstimated.

Store bought blue cheese dressings are too much on me. So I created my own. The plus is that I have more calories in my day as this is lower in calories than almost any other Blue cheese dressing I can find in a store.
This is a great fresh meal you can eat cold. refrigerate and eat all week. Great salad and side dish. You can scoop the tabbouli with romaine lettuce leaves and enjoy !!
This is a very slight modification to a recipe from "Clean Eating" for Moroccan Chickpea Salad. Reduce the calories a bit by using low fat or fat free feta.
